Winemaking:
Whole bunches are gently crushed without destemming, then settled for 48 hours at 12–14?C. The clarified must is racked into French oak barrels (40% new) inoculated with diverse yeast strains; one-third ferments naturally. After sulphuring, the wine matures for 12 months with weekly stirring to build weight and nuance.
