This is made by adding 5% Pinot Noir vinified as red wine from the renowned Cote Aux Enfants plot in Ay. It has a delicate pale salmon hue, an enticing nose of fresh sugar-dusted almonds, a mouth-watering citrus lift and hints of deeper savoury complexity. It’s suave and opulent on the attack, with a mouth-filling sensual mid-palate, beautifully balanced by bright acidity and a fine mousse. It’s utterly irresistible now but will also age effortlessly. This is the first vintage made with 30% of the fruit fermented in whole bunches to accentuate the energy and purity of the fruit. Layered yet vibrant, this has the depth and verve to pair beautifully with duck and venison.
