Description
The Gimonnet family has cultivated vines in Champagne since the 18th century. The official domaine was founded in 1935, operating today as a grower. They have 28 hectares of vineyards spanning both Premier Cru and Grand Cru villages (Cuis, Cramant, Chouilly, Oger, Vertus, Aÿ, Mareuil-sur-Aÿ). They specialise in Blanc de Blancs Champagnes with a focus on terroir expression, finesse, minerality, and elegance.
Tasting Note: Deliciously elegant, initially offers notes of citrus, almond and yellow flowers (mimosa for example). As it warms, the expression becomes richer but also more
distinguished. Aromas of apricot, peach and marshmallow and a rare note of tangerine. After a few minutes, we perceive a sensation minty freshness on a background of ripe wheat and fresh honey. The minerality asserts itself with a lovely acid/sugar balance.
