Of the many ghost distilleries of Scotland that closed in the 1980s, few are rarer to see in bottle than Dallas Dhu. The 176 bottles drawn from this refill Sherry hogshead scarcely make it more likely to come across. As suggested by the dark hue of the whisky, the cask has given lashings of oak spice, tannin and cinder toffee to this old Speysider. The dried fruit and peppery spice would pair beautifully with a game bird or a haunch of venison, should you happen to be serving one.
