Arguably one of the most exciting brands to be built in London NW10, Bimber Distillery has the Apogee XII as the cornerstone of its whisky range. Following blending a number of single malts from the Highlands and Speyside, this lovely drop has a little time in ex-bourbon casks that previously housed Bimber’s single malt. Lemongrass and herbs on the nose give way to rich tropical fruit, with a lovely texture and balance.
