Fernando de Castilla Yema Palomino is an extraordinary, unfortified dry white wine produced by Bodegas Rey Fernando de Castilla in Southern Andalusia, Spain. Crafted by winemaker Maribel Vergara under the vision of Jan Petersen, this bottling represents the inaugural release of the house’s table wine made entirely from Palomino Fino. Sourced from high-altitude Albariza soils, it highlights the unadulterated purity, intense salinity, and world-class potential of this historic Andalusian grape variety.

Vineyard & Production

The Palomino Fino grapes are grown on trellises in the Lomopardo pago, located southeast of Jerez. Situated 63 metres above sea level, it features some of the highest vineyard plots on pure Albariza chalky soil, as well as being one of the most inland sites in the region. The fruit is fermented at a cool 17°C to ensure a slow, precise fermentation that preserves delicate aromatics. Following fermentation, the wine rests on its fine lees for approximately six months prior to bottling to build texture and complexity.

Tasting Notes

In the glass, it reveals a bright golden hue. The nose is rich and expressive, offering ripe lemon peel, crisp golden apples, and subtle undertones of grilled nuts and blossom honey. On the palate, it is bone-dry, intense, and deeply savoury, showcasing a broad texture filled with green apple, a salty almond character, and a gentle bitter nuance. It concludes with an exceptionally long, mouth-watering, and mineral-driven finish.

Perfect Pairings

With its dry, savoury core, subtle nuttiness, and refreshing salinity, this unfortified Palomino is a versatile partner for rich seafood and Spanish cuisine. It pairs magnificently with pan-seared sea bass, grilled octopus, garlic prawns, and roasted turbot. It is also an excellent companion for Jamón Ibérico, grilled poultry, pork loin, salted Marcona almonds, and aged cheeses like Manchego.
