Description
The time-honoured and painstaking methods used by master brewer Noguchi and the team at his eponymous Institute allow Sake to be created with exceptional balance and an inestimable depth of character. As befits the work of such a venerated master craftsman, when drinking his Sake, I can feel the poise and pause that might only be garnered by having worked an unimaginable seventy vintages!
Upon release, I expect some intense cereal notes with very delicate umami and soy touches alongside orchard fruit and a full-bodied mouthfeel. As these bottlings age, they show increased complexity and coalescence whilst exchanging a little depth of body for a growing, contented breadth.
