Description
The Pinot Noir and Pinot Meunier grapes were hand-picked and gently whole-bunch pressed. Approximately 15% of the blend was fermented in 4-5-year-old Burgundy barrels, adding a lovely texture and richness to the wine, and 32% of the total blend went through malolactic fermentation in order to soften the wine’s natural acidity. The wine spent 8 months in tank and barrel before tirage, and a further 24 months ageing on its lees in bottle before disgorging. 2% of Pinot Noir (having been vinified as a still red) was added to enhance colour and give extra vibrant red fruit flavours.
Tasting Note: A delicate rose-pink colour, with a cascade of fine, persistent bubbles. The nose is vibrant and inviting, bursting with fresh red fruits, like delicate strawberries and summer raspberries, elevated by a hint of passion fruit. On the palate, sweet cherry plums make way for buttery shortbread. Light and creamy in texture, it has a wonderfully refreshing acidity that finishes smoothly and lingers beautifully.
