Sweet, ripe mango and pineapple leap out of the glass, followed closely by a honeyed, almost beeswax note that places you unmistakably in Sauternes. In its youth this wine is very luscious but kept in check with bright acidity that steers it away from being cloying. As with many sweet wines, patience will be rewarded with more depth and complexity – but this is perfectly enjoyable now. When it comes to food pairings, think classic: it’s eye-opening with foie gras and heavenly with salty cheeses like Comté or Gruyère. But it’s also beautiful on its own as an after-dinner treat.
