A sublime revelation, this creation from the deepest corner of Hertfordshire is the painstaking work of co-founders Sam Paget Steavenson and Imme Ermgassen. At a stroke, it has entirely re-ordered my thinking about the category of non-alcoholic apéritifs.
Invigoratingly built around a base of well-aged apple cider vinegar, botanicals (including wormwood, thyme and orange zest) are expertly layered in and then rounded off with wildflower honey to ensure an immaculately bittersweet finish. Serve one part Botivo to seven parts soda or tonic water, ideally garnished with a squeezed wedge of ripe orange.
