Winemaking: Hand?picked Grenache and Shiraz grapes are chilled overnight, then pressed straight to tank. The juice is cold?settled and fermented slowly at 12°C before a brief maturation on fine lees for added texture.
Pairing Suggestions: Gazpacho with basil oil, Thai chicken salad, smoked salmon blinis.
